Le Bistrot des Moines
In the Vallée de l’Ouche near Dijon and Beaune, the Abbaye de la Bussière invites you to discover the Bistrot des Moines, a restaurant whose name pays homage to the Cistercians who forged the identity of this small corner of Burgundy. From the monastic atmosphere that reigned here in the Middle Ages, the Gothic architecture as well as a certain spirituality are still in evidence today. And yet, at the Bistrot des Moines the atmosphere is rather one of conviviality and sharing.
A veritable gourmet extension of the gastronomic restaurant ‘Le 1131’, the Bistrot des Moines proposes a cuisine inspired by regional tradition, wholesome and refined. Chef Guillaume Royer, 'Meilleur Ouvrier de France' 2015, assembles gourmet dishes prepared with the best of local produce sought out at nearby markets and at his selected suppliers; the guarantee of freshness and flavours of great quality.
